So after a morning exploring new food haunts, such as Rainbow Grocery and Fatted Calf, I used the opportunity of beautiful weather to take this salad up to our roof terrace and feel smuggly Californian with my healthy eating choice of the day. Now I just need to regularly practice yoga and embrace kale, and i'll be finally assimilated into the fold!
Nectarine, Tomato and Corn Summer Salad
Serves 2 as a main or 4 as a side salad
3 ripe but still firm nectarines, cut into thin slithers.
3 large tomatos, or a mixture of large and cherry tomatoes, larger tomatoes cut to similar size as nectarine slices
2 corns on the cob, grilled, and the kernels cut off
1/2 cup fresh herbs, such as basil or mint, torn
Toss all ingredients into a bowl (fairly self explainatory but felt I had to write something here)
Juice of 1 lemon
2 tsp white wine vinegar
1/2 tsp dijon mustard
1 teaspoon Rosemary (fresh or dried)
3 tablespoons olive oil
Whisk together all the ingredients, or place in a jar and shake the hell out of it.
Pour over the salad, and toss gently.
Serve by itself or with a duck sausage or two. Coz, why not?
